Thank you to everyone who left words of encouragement for me last weekend. This past week has gone a lot better for me, and I've started to feel a bit less overwhelmed. I have been able to cross numerous items off my 'to do' list, and even managed to get caught up on my laundry (no easy task). :)

Today I plan to go through the boys' closets and dresser drawers, so that I can determine just what their clothing needs are for this season. They spend the warm weather months in shorts and tees, but always need a couple pair of jeans and/or long pants, long sleeve shirts, and a jacket for the months it cools down here. Since they all grow so quickly, the odds are really good that many of the items they wore last year at this time are not going to fit, so I want to make sure I replace them before we get our first cold snap.

This coming Tuesday will be my Third-born son's 7th Birthday, so we will be celebrating both tomorrow and on his actual birthday, as well. 'W' is an extremely loving, caring, and kind little boy, not to mention very funny. He is my brave little guy...physically challenged with Cerebral Palsy, but has overcome many obstacles in his seven years, and he holds a very special place in my heart. He shows me every day that life can be enjoyed and lived to the fullest, no matter what kind of challenge you are facing. He inspires me every single day, and I am honored to be his mother. :)

Speaking of his birthday...while I haven't yet decided what I'll wear for this year's celebration, here is the outfit that I wore for it last year.

In the Kitchen...


Since it is the time of year when we will all be starting to plan our Holiday meals, I thought I would once again share my recipe for Sweet Potato Casserole. This is a recipe that comes from the kitchen of my sister's mother-in-law. It's a different take on Sweet Potato Casserole that is absolutely decadent...sort of more like a dessert, you could say. My boys absolutely LOVE this dish and needless to say are thrilled every time I make it...definitely another favorite in the Fabulous Florida Mommy household. :)


Ingredients:
  • 2 Cups Mashed Sweet Potatoes 
  • 1 1/4 Cup Sugar
  •  2 Eggs Beaten 
  • 3/4 Stick Butter 
  • 1/2 Cup Milk 
  • 1/2 Cup Juice from the Potatoes 
  • 1/2 Tsp. Nutmeg 
  • 1/2 Tsp. Cinnamon

Directions:

Preheat oven to 400 degrees. Peel and boil the sweet potatoes, saving the needed juice before draining, then mash. (Two or three large ones should yield 2 cups). Mix all ingredients together, pour into a medium-size casserole dish, and bake for 20 minutes.

Topping Ingredients:
  • 3/4 Cup Crushed Cornflakes 
  • 1/2 Cup Crushed Pecans 
  • 1/2 Cup Brown Sugar 
  • 3/4 Stick Melted Butter

Mix the ingredients together, spread over the baked casserole, and place back in the oven for an additional 10 minutes.


This recipe can easily be doubled (or tripled as I did on Thanksgiving Day last year since it's one of my family's favorites). I even put part of the leftover casserole into a graham cracker pie crust and served it cold with cool whip as dessert on the weekend. Absolutely delicious. :)

  3. I'm glad things are looking up! I am amazed that you can find anytime to post, especially as eloquently and as interestingly as you do. That Sweet Potato Pie recipe looks yummy but dangerous!

    A most heartfelt happy birthday to W! I am always inpsired by angels such as him who remind us to take nothing for granted and that there is always another perspective on things! SInce 7 is a magical number, you are going to have to pull out all of the stops!!

  5. Hi FFM, happy birthday to your little boy!

    I love the Boden dress too .... But am worried about the deep neckline plunge in the back: how would you deal with it?

    The Giovanna photo (and others like it) are always fun for me: they remind me of Betty and Veronica's fashions in the Archie comics. Those girls used to look so glamorous when they wore tall boots, long skirts and (often) fringed jackets together!

    I wish I had a 20% off coupon. I'd totally try the cocoon coat and hope to do a look like Olivia palermo's with it! Sigh!

      I don't think the vee on the back of the Boden dress will be that severe, so you should be able to wear it with a regular bra. I am still contemplating placing an order for it, especially since shipping and returns are free right now, not to mention the 20% off.

    Thank you for the photos and I think Olivia has style for her young age. She always seems to dress so simple and chic. I haven't seen that sweet potato recipe and believe me I've tried a lot of different ones. Will bookmark that for the future as I don't want to rock the boat tomorrow night as my family love the classics.

  7. It seems odd that I should hold up Olivia Palermo as a style icon since I'm older than her. She always seems so perfectly put together. I've never seen her make a fashion mistake. She chooses classic pieces, sometimes with an interesting twist. You can't go wrong with that method.

    Glad to hear you had a good week. I'm feeling a bit behind in my household chores and work is keeping me too busy to catch up. I know how that feels!

    1. Hi Desert Flower! I agree with you about Olivia Palermo, and I really love her sense of style. I think one thing that sets her apart from many other women her age is that she dresses with 'class', and always looks incredibly chic. Never like she is trying too hard. It is quite refreshing in this current time of "throw anything and everything on at once to try and make a statement or get noticed".

      I hope that work slows down for you a bit, and that you're able to get caught up with things around the house! Enjoy the rest of your evening. :)
