Cooking Simplified: Crock Pot Sante Fe Chicken

Hello everyone! I hope you are all doing well and having a wonderful weekend so far! Today I am sharing another slow cooker recipe for a dish that I made earlier this week...
Crock Pot Sante Fe Chicken.

You may remember the post I wrote a few weeks back called Mealtime Simplified, where I shared my love of making meals with the slow cooker, along with some recipes for dishes that I had already made, or would be making in the near future. Several of you also shared your own slow cooker recipes in the comments section, as well as different cooking sites that also have a plethora of recipes to be made using the slow cooker method, and for that I say THANK YOU! The chicken recipe I'm sharing today actually comes from one of those sites called skinnytaste, and it is not only incredibly delicious, but very easy to make, too. :)

Crock Pot Sante Fe Chicken:

This dish consists of slow cooked shredded chicken with corn, tomatoes, and black beans served over rice or in a bowl with nachos on the side. It's topped with chopped scallions, fresh cilantro, cheddar cheese, sour cream, and you can even add a dollop of salsa for extra added flavor if you like. It is very kid-friendly (my boys loved it), freezer friendly, and gluten-free. Made as is, the recipe yields 8 servings, but you can adjust it to make more or less depending on the size of your family and personal needs.

Ingredients:

24 oz (1 1/2) lbs chicken breast
14.4 oz can diced tomatoes with mild green chilies
15 oz can black beans
8 oz frozen corn
1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
3 scallions, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp cayenne pepper (to taste)
salt to taste

Directions:

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top.

Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste. Serve over rice or tortillas and your favorite toppings.

That's it...easy peasy, and the result is an incredibly delicious meal that the entire family is sure to love! :)

  2. This looks great. I have not used our slow cooker enough because I can barely eat in the morning and raw meat kind of makes my skin crawl. Lately, though I've prepped everything the night before and put it together in a zip lock bag or pyrex bowl so I can just plop everything into the slow cooker in the morning. BBQ pulled pork and southwestern pulled chicken are always a hit - so after BBQ season I'm determined to try more slow cooker recipes.

    1. Hi JulieStyles! This really is such a delicious dish...you should definitely give it a try. I use our slow cooker on a weekly basis, since it's just so easy to throw in items for a meal and not have to worry about it until dinnertime. Let me know what you think if you decide to try this recipe out! :)
