๐Ÿ’ฅ#flashbackfriday... a few years ago, I found this Star Wars gem from my elementary school days tucked away in a box with a handful of other childhood memorabilia.



It's a folder with Princess Leia on the front and Luke Skywalker on the back, made in 1977. As you can see, my love of Star Wars began at a young age, and it still continues to present day.

Cooking Simplified: Crock Pot Sante Fe Chicken

Hello my lovelies! I hope you are all doing well and having a wonderful week so far!
Today I am re-sharing a slow cooker recipe for a dish that I make on a regular basis...
Crock Pot Sante Fe Chicken.

This dish consists of slow cooked shredded chicken with corn, tomatoes, and black beans served over rice or in a bowl with nachos on the side. It's topped with chopped scallions, fresh cilantro, cheddar cheese, sour cream, and you can even add a dollop of salsa for extra added flavor if you like. It is very kid-friendly (my boys love it), freezer friendly, and gluten-free. ๐Ÿ’•
Made as is, the recipe yields 8 servings, but you can adjust it to make more or less depending on the size of your family and personal needs.

Ingredients:

24 oz (1 1/2) lbs chicken breast
14.4 oz can diced tomatoes with mild green chilies
15 oz can black beans
8 oz frozen corn
1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
3 scallions, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp cayenne pepper (to taste)
salt to taste

Directions:

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top.

Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste. Serve over rice or tortillas and your favorite toppings.

That's it. Easy peasy...
the result is an incredibly delicious meal that the entire family is sure to love! ๐Ÿ˜Š๐Ÿ’—๐Ÿ˜Š

Simplified Style - What I Wore...

What I Wore...

This is an outfit I wore last fall, and one that I will undoubtedly be wearing again this year.

The Details...

*Free People 'Not Your Brother's' Utility Jacket in camo. I absolutely adore this jacket...one of my absolute faves, so very comfortable to wear, and goes with just about anything. I normally wear an XSmall in Free People, but sized up to a small in this jacket for more roominess in the shoulders, and the ability to wear more layers underneath.
Similar, less spendy option here.

*L.L. Bean Signature Merino Crewneck Sweater in gunmetal gray heather. Another love for me...I also own it in navy, and would love to get the camel this fall, as well. The sweater is excellent quality and soft against the skin. Sizing may run a tad large, although I ordered my normal XSmall, as I do with most items at L.L. Bean, and it fits perfectly through the shoulders, with just a touch of slouch through the body for a comfy, relaxed vibe.

*J.Crew Point Sur Japanese Denim with Cashmere Jean in Lynndale Wash - these pop back on the J.Crew website on a regular basis, so snatch up a pair if you get the chance.
They are very soft and run true to size...highly recommend. Similar here and here

*Monet Silver Hoop Earrings - classic and chic.
A definite 'must have' staple jewelry item for any woman's wardrobe.
This pair look really nice, too.

*Etsy Tiny Silver Cross 14" necklace.
Prior to this necklace, I had also purchased a gold cross necklace from the same seller, and have been very pleased with both items.

*Sundance Letter Charm on a 16" silver chain.
Hands down one of my favorite jewelry pieces that I own.
The letters available are starting to get limited, so be sure to order quickly if your desired initial is still in stock. I honestly wish now that I had bought several more of the charms for Christmas gifts before the letters I needed sold out.


*Brighton Braided Black Leather Bracelet - this is a really pretty, more dainty piece that my mother gifted to me, and I normally wear it on the left arm with my watch.

Simplified Style... J.Crew Icon Trench in Plaid Italian Wool

I don't know about you, but I am really, really ready for Autumn to arrive. Summer has outworn its welcome, in my opinion, and I say to Fall...Bring. It. On!!! ๐Ÿ’•๐Ÿ˜Š๐Ÿ’•
Since I am in a 'give me cooler temps' kind of mood lately, I thought I would share one of the outfits I will be wearing this coming fall season...
Simplified Style... J.Crew Icon Trench in Plaid Italian Wool

The Details...


Shop It...

*J.Crew Icon Trench Coat in Plaid Italian Wool - such a classic, gorgeous plaid coat done in subtle, understated tones of navy, olive green, & a gorgeous burgundy/rust shade. This is one of those coats that never goes out of style, and will be a true investment piece that you'll wear for many years to come. I purchased mine last year, but hopefully they will bring it back again this year for anyone who missed out on it then. In the meantime, you can always check Ebay or Poshmark in hopes of finding one there. Similar option here, as well.

Sizing: In my opinion, the sizing runs smaller on this one than it does the majority of coats and jackets offered at J.Crew over the past couple of years (it fits me the same as the Icon Trench Coat from 2010). For this reason, I would suggest sizing up at least one size for best fit (especially if you have broad shoulders), unless you are very small on top. I normally wear a 0 or 2 in coats and jackets at J.Crew (depending on the style), and the size 4 plaid Icon fits me well. If you're still in doubt as to which size you should choose, you can contact J.Crew Customer Service for exact measurements. (Give them the item number from the product page, and they should be able to look them up for you, even with the trench being sold out.)

Warmth: As far as the warmth factor goes, I would consider this a fall or spring coat for those of us in colder climates, although if you layer a sweater underneath you may be able to get away with wearing it in colder temps, especially if you're just going from your warm house, to a warm car, to a warm office, store, etc. The lovely ladies living in the south, however, are more than likely able to wear the coat throughout the entire winter.

All in all, I think it truly is a really beautiful investment piece...one that I am looking forward to wearing again this year, and many years to come.


*Eileen Fisher Plaid Flannel Crop Wide Leg Pants - beautifully done subtle plaid on the pants, making them a more neutral piece to wear with a large variety of colors.
Eileen Fisher clothing tends to run large, so consider sizing down one size from your norm if you're trying out her line for the first time. EF clothing does tend toward the spendy side, but more often than not the quality warrants the higher price tag, plus it is usually possible to score the majority of her clothing at really great sale prices...so bookmark the links!

I was surprised at how much of a neutral the ash grey velvet color is in person.
They really are a very versatile shoe, not to mention quite comfortable.
The color of the velvet pairs beautifully with the bag, and the lucite heel compliments the reddish shade in the plaid of the coat, too.
The heels are currently sold out, but they do keep popping back up on the website in various sizes, so if you're looking for a pair keep checking this link, the J.Crew sale section, or call a store and ask them to check inventory for all the stores to see if anyone has them in your size.

Tailoring Simplified: The Instant Button®

A personal 'go to' item in my wardrobe arsenal is the Instant Button®. I originally blogged about it here back in August of 2010, and have been using one ever since. Most of my jeans and pants end up being too large at the waist because I have to size up one to fit my hip/thigh area. #TBT: Take Me to the Center of the Universe

Thought I'd share a little 'Throwback Thursday' for today. ๐Ÿ˜Š
This was my trip to the 'Center of the Universe', that I wrote about back in August of 2015...


Last month my parents (who are visiting from Florida) and I took a road trip over to
Wallace, Idaho, a quaint little town which also happens to be where "The Center of the Universe" is, or so they claim. (The mayor of Wallace officially proclaimed it so in 2004 after finding that the EPA followed logic along the lines of “if something can’t be disproven, it must be true”…)

A little more about Wallace (taken from their Facebook Page..."Wallace is a historic city in the Panhandle region of the U.S. state of Idaho and the county seat of Shoshone County in the Silver Valley mining district. Wallace sits alongside the South Fork Coeur d'Alene River (and Interstate 90) and the town's population was 784 at the 2010 census.

Wallace is the principal town of the Coeur d'Alene silver-mining district, which produced more silver than any other mining district in the United States. Burke-Canyon Road runs through historic mining communities – many of them now deserted – north and eastward toward the Montana state line. East of Wallace, the Route of the Hiawatha (rails-to-trails) and the Lookout Pass ski area are popular with locals and tourists.

The elevation is 2,728 feet (831 m) above sea level."

The drive over to Wallace from my home in Montana, is absolutely breathtaking, and is one that my family always enjoys everytime we make the trip to Shriners Hospital for Children in Spokane, for my son's clinic visits. The road we travel follows the Clark Fork River winding through the majestic mountains from Montana into Idaho...


If you ever get the chance to travel that way, you really should, as it is an utterly enjoyable, and completely unforgettable drive.

While in Wallace, we browsed the local shops, and ate lunch at 1313 Club Historic Saloon & Grill, where the food was fabulous, and the prices reasonable. The local shop owners are incredibly friendly, and offer goods ranging from vintage and antique items, to silver handcrafted jewelry, to snow sleds and antlers. There is definitely something for everyone.



After lunch we looked around the town a little more, and then we decided that we would each have our photos taken at "The Center of the Universe" before hitting the road again on our further travels. Here is yours truly...

Cooking Simplified: Old Fashioned Homemade Coffee Cake

This is a family favorite in the All Things Simplified household... so absolutely moist and delicious, not to mention incredibly easy to make. My best guess is that your family will love it too! ๐Ÿ’•

Ingredients:

2 cups flour
2 large eggs
1 cup sugar
1 cup milk
4 tablespoons shortening
1 teaspoon salt
4 teaspoons baking powder

Topping:

1/2 cup brown sugar
2 teaspoons cinnamon
2 tablespoons flour
2 tablespoons butter
finely chopped nuts (optional)
**I actually double the topping since we like the coffee cake extra sweet at our house.

Directions:

Mix the flour, sugar, salt, and baking powder together.
Add the eggs, milk, and shortening to the dry ingredients, and beat at high speed for 3 minutes.
Pour into a greased 9x13-inch pan.
Mix together topping ingredients.
Sprinkle the topping ingredients on top of the poured cake mixture in the pan.
Bake at 350 degrees F for approx. 40 minutes or until it tests done.

Sculptured Delight Dress

This was one of my very first Sundance purchases.
The website describes it as..."A dazzling full skirt dress, with slim-fit bodice, pintuck and pointelle stitching. Back keyhole detail with jewel button closure. Cotton/polyester/silk. Hand wash. Imported. Exclusive. Sizes XS (2), S (4 to 6), M (8 to 10), L (12 to 14), XL (16). Approx. 36"L."

This dress is really lovely in person. It is not only very flattering, but also comfortable to wear, and a decent length, too. As far as sizing goes, I would say it is comparable to J.Crew sizes.
I usually wear a 0 or 2 in dresses at J.Crew, and purchased the XSmall in this dress. Yes, I know the temps are sweltering outside, but if you can swing it, get this one and tuck it away for a couple of months. The heat won't last forever, and you'll be happy you have this one come fall. ๐Ÿ˜Š

This was another one of my first purchases, and the bag quickly became one of my favorites. The size and weight are perfect, I love the thick strap, and the quality is excellent. The chocolate colorway is currently sold out, but there are several other gorgeous colors to choose from.

I own these boots in both colors, and actually just ordered a second 'back up' pair in the black.
Yes...I love them THAT much! They keep my feet very warm, and the hidden wedge gives a little 'lift', almost as if wearing a bit of a heel, but still very comfortable. Highly recommend these!!!
