Cooking Simplified: Easy Meatloaf

I came across this meatloaf recipe a couple years ago, and it has since then become a family favorite. Honestly, my boys LOVE this meatloaf, and are absolutely thrilled every single time they find out that I'm making it for dinner. Of course with a house full of boys (one who's a teenager), plus my husband to feed, I always triple the amounts on the recipe, and rarely have any leftovers.

Easy Meatloaf

Ingredients:

1 1/2 Pounds ground beef
1 egg
1 onion, chopped
1 Cup milk
salt to taste
pepper to taste
2 Tbsp. brown sugar
2 Tbsp. mustard
1/3 Cup ketchup

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, combine the ground beef, egg, onion, milk and bread crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish. (I personally like to make the sauce below first and add about a 1/4 cup of it to the meatloaf mixture.)

3. In a separate small bowl, combine the brown sugar, mustard, and ketchup. Mix well and pour over the meatloaf. (I always make extra to pour on the slices, too.)

4. Bake at 350 degrees F (175 degrees C) for 1 hour or until center is done.

That's it...super easy to make and incredibly delicious!
