Yes Please!!!

How absolutely divine is this? I love everything about it...the color, silhouette, embroidered silk velvet fabric, and bohemian style. Not to mention that it is reversible! I love how it's styled with a blouse and jeans in the photo, but think it would be equally lovely worn over a dress and paired with knee boots.

Now that the autumn season has officially arrived and cooler temps will be sure to follow soon, this is a perfect item to add to your fall wardrobe. Sundance has quickly become one of my favorite retailers, and this cardigan happens to be the latest item on my fall wardrobe wishlist.

Anyone Else Ready for Autumn?

I am ready! The weather has begun to cool down over the past couple of weeks, and you can just feel that autumn is near. We already have snow on top of several of the mountains that surround our valley, the days are getting much shorter, and the temps are getting increasingly cooler at night. This will be my second year to enjoy actual fall weather with the changing leaves, crisp air, cozy sweaters, & hot cocoa by the fire...needless to say, I cannot wait for autumn to officially arrive!

Life Simplified...Thankful Thursday

Life can be difficult or stressful no matter your circumstance...where you live and work, whether you're married or single, have a child, lots of children, or no children at all. I believe that in these times it is extra important to think of all the good things in your life, no matter how small, as it really does help to put your focus on the positive. Instead of being caught up in all the 'bad stuff' happening in your life, it can help to change your attitude into one of gratitude, making your present life and circumstances much more enjoyable.

Today I am sharing my list of 10 Things I am Thankful for on this Thursday...

Cooking Simplified: Layered Pumpkin Cake with Caramel & Pecans

How absolutely decadent does this cake look? I am definitely giving this one a try soon!

Layered Pumpkin Cake with Caramel & Pecans


1 pkg. (2-layer size) yellow cake mix
1 can (15 oz.) pumpkin, divided - 100% pumpkin, not pumpkin pie filling
1/2 cup milk
1/3 cup oil
4 eggs
1-1/2 teaspoon pumpkin pie spice, divided
1 pkg. (8 oz.) Cream Cheese, softened
1 cup powdered sugar
1 tub (8 oz.) whipped topping, thawed
1/4 cup caramel ice cream topping
1/4 cup chopped Pecans


Preheat oven to 350°F

BEAT cake mix, 1 cup pumpkin, milk, oil, eggs and 1 tsp. spice in stand mixer, or, beat in a large bowl with a hand mixer.

Pour into 2 greased and floured 9-inch round pans.

Put the cake pans in the oven and bake for 28 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min. Remove the cakes from the pans and transfer to wire racks to completely cool.

BEAT cream cheese in medium bowl with hand mixer, or stand alone mixer, until creamy. Add in the sugar, remaining pumpkin and spice; mix well. Gently stir in the whipped topping.

Cut each cake layer horizontally in half with serrated knife; stack on serving plate, spreading cream cheese filling between layers, leaving top layer unfrosted. Do not frost the top layer!

Drizzle with caramel topping just before serving; top with nuts. Refrigerate any leftovers.
