Cooking Simplified: Best-Ever Banana Bread

I came across this recipe for Banana Bread a few years ago. I was running low on butter and needed one that used oil instead. I am so pleased to have found this particular recipe, as it is absolutely delicious and has become a fast favorite in the All Things Simplified household. :)

Best-Ever Banana Bread


2 Cups Sugar
1/2 Cup Oil
3 Very Ripe Bananas
1/2 tsp. Baking Soda
1/2 tsp. Salt
2 Cups Flour


Cream sugar, eggs, oil, and bananas together (until the bananas are completely mashed). Sift soda, salt, and flour together, then add to the creamed mixture. Mix at high speed for two minutes. Pour into well greased loaf pans. (I usually double this recipe and bake it in a 9x13 inch cake pan). Bake at 350 degrees for about 45 minutes or until golden brown (test with a toothpick to check if done). When I double the recipe it takes about an 1.25 hours to bake completely. I cover the dish with aluminum foil for the last 15-20 minutes so that the top doesn't get too brown.

That's all there is to it! The result...a loaf of incredibly moist, delicious, Best-Ever Banana Bread!
