Monday Musings...

Hello are you? Did you have a good weekend?
Mine was nice. Fairly relaxing, which is always a good thing. Don't get me wrong, I thoroughly enjoy being on the go, taking road trips, and going on new adventures, but there are times when I really just don't want to do anything but hang out at home...this weekend was one of those times.

You see, I haven't been sleeping very well as of late. I still have a lot of congestion after my horrible bout of influenza, and the cough has been keeping me up at night. On top of that, I am having horrible drenching night sweats, which leave me soaking wet and freezing.
At this point I'm not sure if the night sweats are due to an infection and lingering low-grade fever, or if they are hormone related. After all, I will be 46 in a few weeks, so a new season in my life may be just around the corner (I'm sure you ladies know which season it is that I'm talking about).
Either way, I've been feeling quite fatigued as of late, but have been sure to keep drinking plenty of water to stay hydrated, and continue to take my daily dose of vitamins for a bit of extra help.

Speaking of drinking plenty of water, I ordered two of these water bottles from Amazon, and they are fabulous...a 4.5 star rating out of over 3500 reviews actually.
I bought the grey (in case my hubby wants to carry one, although I love the color for myself, as well) and the pink w/pink cap (so very cute, and such a fun, happy color, too).
One of my get healthier/stay healthier goals is to drink at least 64oz. of water a day, and this water bottle is really helping me to keep that goal so far. It's easy to tote around, and I don't have to worry about the water spilling or leaking out everywhere.

So very true...although would you believe me if I told you that I have been drinking less coffee lately?
I know, I know, it's hard for me to believe it, too! I do still have a cup or two when I wake up in the morning...after all, it's my daily ritual, but instead of getting another cup or two midday, and sometimes even early afternoon, I have been opting to drink water (see above) instead. Yay me!

Heehee...I just couldn't resist.

Here are two I've come across that you simply must know about...

*Rockport City Casuals Rola Tall Riding Boot - oh. my. goodness. are these ever comfortable!
The Nutella Tumble Leather is such a gorgeous shade, and on sale at fabulous prices, too!
(Some better than others depending on the size you need.) The sizing is a tad small, so go up a half size if you have any doubt. I normally wear a size 9.5, but own these in a 10.
Love. Love. LOVE!!! This particular color pairs beautifully with the World Journey Bag from Sundance, too. (I reviewed the chocolate version of the bag in this post last November.)

I first shared this next Fabulous Find way back here in 2010. They are the Instant Button®, and are now a 'go to' staple in my wardrobe arsenal. You see, most of my jeans and pants end up being too large at the waist because I have to size up one to fit my hip/thigh area. I used to either wear a belt or have them tailored to fit until I discovered the Instant Button®, which acts like a 'temporary tailor', allowing me to adjust the waistband of my jeans and pants to fit needle and thread required. So if you have the same problem with the fit of the waist on your jeans and pants like I do, then definitely give the Instant Button® a try...highly recommend!

Before I go...

This is my latest breakfast/brunch obsession. Scrambled Eggs with Rice & Cheese.
I cannot begin to tell you how much I love this dish! Seriously. I could eat it every day of the week. Yes, it's that good, not to mention, very easy to whip up, too.
Here's what you'll need for 2 servings:


*6 Eggs
*2 Tbsp. Heavy Cream
*1/2 Tab Butter
*2 Cups Rice - I prefer to use brown or wild rice, but white rice is just as yummy.
Also, instant rice is fine, or you can use slow-cooking rice if you prefer.
*2 Green Onions - optional
*Salt to taste
*Pepper to taste

Make it:

*Chop the green onions.
*Whisk together the eggs, heavy cream, butter, and chopped green onions.
*Add salt and pepper to the mixture & whisk some more.
*Cook the rice while you're scrambling the egg mixture.
*When both are done, divide by half, and scoop into two bowls.
*Top each with 1/4 cup shredded cheese (use more or less depending on personal preference), and mix together until cheese has melted.

So yummy! Let me know what you think if you decide to give it a try!

  2. Hi Melissa, thanks SO much for that tip about the Instant Button!! I have the same issue with a few pants and this is exactly what i've been looking for! Made my day!

    That rice bowl looks so delish!! I had to cut down on pasta and rice a few years ago b/c my doctor said I was pre-diabetic so I worked with a nutritionist who helped me eliminate some habits (bye bye, yogurt, I knew you when!) I still eat rice, but only once in a while. This might have to be my next once in a while recipe! (I just made a risotto not too long ago so i'll have to wait before eating it again.) I love the ingredients in your rice.

    PS, haha re) the decaf joke! For real - I only drink one cup a day, but I would be so sad (& unproductive at work!) without it! Mmmm, coffee! :-)

    1. Hi TM93! You will love the Instant Button! It is a complete game changer when it comes to the fit of your jeans and pants. Such a brilliant idea!

      The rice dish is just so yummy, imo! I also restrain from overdoing it on pasta, rice, any carbohydrates really, so this is my morning 'splurge', and then I just eat protein, fruit, & veggies for the rest of the day. Let me know what you think if you give it a try!

      I do enjoy that first cup of coffee in the morning! Now that I'm not drinking as much the rest of the day, I think I actually feel less tired. Granted I am wiped out by nightfall, but it's worth it not to feel drained all day long instead.
